Instructions
- Prepare your vegetables: Slice zucchini into thick pieces, chop onion into layers, and cut bell pepper into similar-sized chunks.
- Marinate: Combine vegetables in a Ziploc bag with Italian dressing and optional herbs. Refrigerate for 4-6 hours.
- Preheat the grill: Heat your grill pan to medium-high.
- Drain and cook: Drain the marinade, then grill vegetables on the pan, stirring every 5 minutes until cooked through and slightly crisp (about 15-20 minutes).
- Serve hot, seasoned with salt and pepper, and garnished with parsley.
