- 2 tablespoons olive oil
- 1/2 cup diced green bell pepper
- 1/4 cup diced onion
- 1 pound ground turkey (93/7)
- 1 large egg (lightly beaten)
- 1/3 cup breadcrumbs
- 1 tablespoon ketchup
- 1 tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce (non-alcoholic)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup ketchup (for glaze)
- 1 tablespoon chili sauce (for glaze)
- 1 tablespoon maple syrup (for glaze)
- 1 teaspoon Worcestershire sauce (for glaze)
- Salt and pepper (to taste for glaze)
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Sauté diced green bell pepper and onion in olive oil until soft, about 3-4 minutes; set aside to cool.
- In a mixing bowl, combine ground turkey, beaten egg, breadcrumbs, ketchup, remaining olive oil, Dijon mustard, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Gently fold in cooled vegetables.
- Form the mixture into 4-5 mini loaves and place on the prepared baking sheet.
- Whisk together glaze ingredients and brush over each mini meatloaf.
- Bake for 20-25 minutes or until internal temperature reaches 165°F. Let rest for 5 minutes before serving.
