Ingredients
- 10.5 cups water or organic unsalted vegetable broth
- 1 yellow onion
- 2 celery ribs
- 3 carrots
- 4 garlic cloves
- 1 cup pastina (or any small pasta)
- Salt to taste
Instructions
- In a large pot, combine water or vegetable broth with halved onion, celery, carrots, garlic, and salt. Bring to a boil.
- Reduce heat to medium-low, semi-cover, and simmer for about 45 minutes until vegetables are soft.
- Use a slotted spoon to transfer cooked vegetables to a blender; add two ladles of broth and blend until smooth.
- Return the blended mixture to the pot.
- In a separate small pot, boil pastina according to package instructions until tender.
- Serve by adding boiled pastina to bowls and pouring hot broth over it.
