- 1 lb chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup pineapple chunks, fresh or canned
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground ginger
- 1 cup long-grain white rice
- 2 cups water
Instructions
- Rinse the rice under cold water and combine it with water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes until tender.
- In a large skillet over medium heat, heat olive oil. Add chicken pieces and cook for about 5–7 minutes until golden brown.
- Add the chopped onion and cook for 2–3 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
- Mix in pineapple chunks, soy sauce, honey, black pepper, and ground ginger. Stir well to coat all ingredients.
- Reduce heat to low and let it simmer for 5–7 minutes until the sauce thickens slightly.
- Serve the pineapple chicken over warm rice.
