  • 2 cups water

Instructions

  1. Rinse the rice under cold water and combine it with water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes until tender.
  2. In a large skillet over medium heat, heat olive oil. Add chicken pieces and cook for about 5–7 minutes until golden brown.
  3. Add the chopped onion and cook for 2–3 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  4. Mix in pineapple chunks, soy sauce, honey, black pepper, and ground ginger. Stir well to coat all ingredients.
  5. Reduce heat to low and let it simmer for 5–7 minutes until the sauce thickens slightly.
  6. Serve the pineapple chicken over warm rice.
