- 1 1/4 cups all-purpose flour

- 2/3 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 teaspoons coconut extract
- 1 (8 oz) can crushed pineapple (do not drain)
- 1 1/2 cups sweetened shredded coconut (divided)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt; set aside.
- In a large mixing bowl, beat butter, cream cheese, and sugar until light and fluffy using an electric mixer.
- Add eggs one at a time, mixing well after each; then add vanilla and coconut extracts until smooth.
- Gradually mix in the dry ingredients until just combined—avoid overmixing.
- Fold in crushed pineapple and one cup of shredded coconut carefully.
- Pour batter into the prepared loaf pan and sprinkle with remaining coconut. Tent loosely with foil.
- Bake for 50 to 60 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
