Ingredients
- 1 cup balsamic vinegar
- 2 tbsp brown sugar
- 2 tbsp olive oil
- 3 medium zucchini (sliced into 1/4″ rounds)
- Kosher salt
- Pepper
- ½ to ¾ tsp sweet paprika
Instructions
- Make the Balsamic Glaze: In a saucepan, combine balsamic vinegar and brown sugar. Heat over medium-high until boiling, then reduce to medium-low and simmer for about 20 minutes until thickened. Allow cooling for 10 minutes.
- Sauté the Zucchini: Heat olive oil in a large skillet over medium-high heat. Add sliced zucchini rounds, seasoning with salt, pepper, and paprika. Sauté for about 7 to 10 minutes until tender and lightly browned.
- Serve: Transfer zucchini to a serving platter using a slotted spoon. Drizzle generously with balsamic glaze and optionally garnish with sesame seeds and dried mint or parsley.
