Ingredients
- 1 1/2 pounds strawberries, quartered
- 1/3 cup granulated sugar
- 2 tablespoons fresh lemon juice
- 2 teaspoons cornstarch
- 1/2 teaspoon vanilla extract
- Pinch of kosher salt
Instructions
- Slice the strawberries and reserve 1/3 for later.
- In a saucepan, combine 2/3 of the strawberries with sugar.
- In a bowl, whisk together lemon juice, cornstarch, vanilla extract, and salt until smooth; add to the saucepan.
- Cook over medium heat until boiling, then reduce heat and stir for 4-5 minutes until thickened.
- Remove from heat and mix in the remaining strawberries.
- Cool before transferring to an airtight container; chill before serving.
