- 12 slices thinly sliced beef
- 1 pack enoki mushrooms (split into 12 pieces)
- 1/2 small yellow onion (sliced)
- 2 tablespoons non-alcoholic mirin
- 3 tablespoons soy sauce
- 1/2 tablespoon sugar
- 1/4 teaspoon black pepper
- 1 cup dashi broth
- 2 large eggs
- 1 stalk green onion (diced)
- 1 tablespoon sesame seeds
Instructions
- Prep the enoki mushrooms by dividing them into small bunches and rolling each with one slice of beef to form individual rolls.
- In a mixing bowl, combine dashi broth, mirin, soy sauce, sugar, and black pepper; stir until the sugar dissolves.
- In a skillet over medium heat, heat olive oil and sauté sliced onions until browned (about 3-5 minutes).
- Place beef rolls in the skillet over onions and drizzle with the prepared sauce. Cover and cook for 3 minutes.
- Flip the rolls gently using tongs or a spatula and cook for another 1-2 minutes until fully cooked.
- Scramble eggs in a bowl and pour over the cooking rolls; simmer until eggs are set (about 2 minutes).
- Garnish with diced green onion and sesame seeds before serving hot alongside steamed rice.
