Ingredients
- 12 large Medjool dates
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup chopped walnuts
- 1/4 cup honey
- 1 tablespoon olive oil
- 1 teaspoon chopped fresh thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Slice each date lengthwise and remove the pit.
- In a bowl, mix crumbled feta and grated Parmesan until well combined.
- Stuff each date with the cheese mixture, pressing gently.
- In a skillet over medium heat, toast walnuts in olive oil for about 5 minutes until golden.
- Remove from heat and stir in honey and thyme; season with salt and pepper.
- Place stuffed dates on a baking sheet; drizzle with the walnut mixture.
- Bake for about 10 minutes until warm and slightly melted.
