Ingredients
- 1/4 cup unsalted butter (softened)
- 3 cloves garlic (minced)
- 3 sprigs rosemary (destemmed and minced)
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 fryer chicken (broken into 6 or 8 pieces)
- 1/2 cup balsamic vinegar
- 1/2 cup fig preserves
- Fresh parsley for garnish
Instructions
- Preheat your oven to 425 °F (218 °C).
- Mix softened butter with half of the minced garlic, rosemary, salt, and pepper in a bowl.
- Rub the butter mixture generously onto chicken pieces in a cast iron skillet.
- Roast the chicken in the oven while whisking together balsamic vinegar, fig preserves, remaining garlic, rosemary, salt, and pepper.
- After 15 minutes of roasting, brush most of the glaze over the chicken and return it to the oven, basting every 10 minutes.
- Cook until the internal temperature reaches 165 °F (74 °C), approximately 25 minutes total.
