Ingredients
- 4 large flour tortillas
- 1 cup cooked shredded chicken (about 200g)
- 1 cup fresh spinach (30g)
- 1 cup halved cherry tomatoes (150g)
- 1/2 cup crumbled feta cheese (75g)
- 2 tsp olive oil
- 1 tsp dried oregano
Instructions
- 1. Preheat a non-stick skillet over medium heat until hot.
- 2. In a bowl, mix together shredded chicken, spinach, cherry tomatoes, feta cheese, and oregano.
- 3. Place one tortilla on a clean surface and spoon half of the filling mixture onto one side.
- 4. Drizzle olive oil in the skillet and fold the tortilla over the filling. Cook for about 3 minutes per side until golden brown and crispy.
- 5. Remove from the pan, let cool briefly, slice into wedges, and serve.
