Ingredients
- 2 medium oranges
- 150 g almond meal
- 100 g shelled pistachios, finely ground
- 6 large eggs
- 200 g granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
Instructions
- Preheat your oven to 170°C (340°F). Line the base of a springform pan with parchment paper and lightly grease the sides.
- Boil the oranges in water for about 60 minutes. Once cooled, remove seeds and puree until smooth.
- In a bowl, whisk eggs and sugar until pale; stir in orange puree.
- In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Fold into the egg mixture until just combined.
- Pour batter into the pan and smooth the top. Bake for 50-60 minutes or until set.
- Cool for 10 minutes in the pan before transferring to a wire rack.
