  • 150 g almond meal
  • 100 g shelled pistachios, finely ground

  • 200 g granulated sugar
  • 1 teaspoon baking powder

  1. Preheat your oven to 170°C (340°F). Line the base of a springform pan with parchment paper and lightly grease the sides.
  2. Boil the oranges in water for about 60 minutes. Once cooled, remove seeds and puree until smooth.
  3. In a bowl, whisk eggs and sugar until pale; stir in orange puree.
  4. In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Fold into the egg mixture until just combined.
  5. Pour batter into the pan and smooth the top. Bake for 50-60 minutes or until set.
  6. Cool for 10 minutes in the pan before transferring to a wire rack.
