- 4 flour tortillas (8-inch size)
- 2 cups fresh spinach (roughly chopped)
- 1 cup feta cheese (crumbled)
- 1 cup mozzarella cheese (shredded)
- 1 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely diced)
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon olive oil (extra virgin recommended)
- 1 clove garlic (minced)
- 1 teaspoon fresh lemon juice
- Salt and pepper to taste
Instructions
- Prepare all ingredients by washing and chopping vegetables as needed.
- In a medium bowl, mix spinach, cherry tomatoes, red onion, garlic, herbs, feta cheese, mozzarella cheese, lemon juice, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and add olive oil.
- Place one tortilla down, spoon about 3/4 cup of the filling on one half, fold the tortilla over, and press gently.
- Cook each quesadilla for about 4-5 minutes per side until golden brown and the cheese is melted.
