Ingredients
- 4 cod fillets
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss halved baby potatoes with olive oil, salt, pepper, and dried thyme. Spread on a baking sheet.
- Roast potatoes for about 20 minutes until golden brown and tender.
- Meanwhile, melt butter in a saucepan over medium-low heat. Add minced garlic and sauté until fragrant; stir in parsley.
- Push roasted potatoes to one side of the baking sheet and place cod fillets on the other side. Brush fillets with garlic butter sauce.
- Bake for an additional 12-15 minutes until cod is opaque and flakes easily.
- Serve with remaining garlic butter drizzled over both the cod and potatoes.
