Ingredients
- 1 salmon fillet
- 2 medium potatoes, peeled & diced
- 1 cup baby carrots
- 1 cup broccoli florets
- 1 tbsp olive oil
- 1 tbsp butter (for salmon)
- 1 tbsp butter (for carrots)
- 1 garlic clove, smashed
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp honey or maple syrup
- Salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Toss diced potatoes in olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
- In a skillet over medium heat, melt butter and add smashed garlic. Season the salmon with paprika, salt, and pepper. Cook skin-side down for about 4-5 minutes per side until fully cooked.
- Steam baby carrots for about 5 minutes until tender. In a small pan, melt butter and stir in honey or maple syrup; toss the steamed carrots in the glaze.
- Steam broccoli florets for about 3-4 minutes until bright green and tender-crisp. Lightly sprinkle with salt before serving.
- Plate the salmon alongside roasted potatoes, glazed carrots, and steamed broccoli. Serve hot.
