Ingredients
- 4 large bell peppers
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 4 tbsp butter
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, melt the butter and sauté minced garlic until fragrant. Add shrimp and cook until pink; chop into small pieces.
- In a mixing bowl, combine shrimp, breadcrumbs, Parmesan cheese, salt, and pepper.
- Stuff bell peppers generously with the shrimp mixture and place them upright in a baking dish.
- Bake for 25-30 minutes until peppers are tender.
- Garnish with chopped parsley before serving.
