  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole milk
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground chicken, grated Parmesan, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, pepper, and whole milk until just mixed.
  3. Form the mixture into a loaf shape on the baking sheet or press into a loaf pan.
  4. Bake for 40–45 minutes until the internal temperature reaches 165°F (74°C).
  5. While baking, prepare the glaze by melting butter in a saucepan over medium heat. Add minced garlic and sauté for 1–2 minutes before stirring in grated Parmesan and parsley until thickened.
  6. Brush the glaze over the meatloaf and return to the oven for an additional 5–7 minutes.
  7. Let rest for 5 minutes before slicing and serving.
