- 6 oz cream cheese, cold
- 3 tbsp granulated white sugar
- 1/2 tsp vanilla

- 1/2 tsp baking soda
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 2 egg yolks, at room temperature
- 1 tsp vanilla
- 1/3 cup unsulphured molasses
Instructions
- Prepare the cream cheese filling by mixing cold cream cheese with sugar and vanilla until smooth.
- In a separate bowl, combine dry ingredients including flour and spices. Cream softened butter and brown sugar in another bowl, then mix in egg yolks and vanilla.
- Gradually add dry ingredients into the creamed mixture until fully combined.
- Preheat the oven to 350°F (175°C). Shape cookie dough around a teaspoon of cream cheese filling to form balls.
- Place on a parchment-lined baking sheet and bake for about 11 minutes until set but soft in the center. Cool before serving.
