  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground ginger
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 1 tsp vanilla
  • 1/3 cup unsulphured molasses

Instructions

  1. Prepare the cream cheese filling by mixing cold cream cheese with sugar and vanilla until smooth.
  2. In a separate bowl, combine dry ingredients including flour and spices. Cream softened butter and brown sugar in another bowl, then mix in egg yolks and vanilla.
  3. Gradually add dry ingredients into the creamed mixture until fully combined.
  4. Preheat the oven to 350°F (175°C). Shape cookie dough around a teaspoon of cream cheese filling to form balls.
  5. Place on a parchment-lined baking sheet and bake for about 11 minutes until set but soft in the center. Cool before serving.
