- 1 cup unsalted butter (room temperature)
- ½ cup dark brown sugar
- ¼ cup granulated sugar
- 1½ teaspoons kosher salt
- ½ teaspoon coarse sea salt
- 1 large egg (lightly beaten)
- 2 tablespoons unsulphured molasses
- 2¼ cups all-purpose flour
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon apple pie spice
- ¾ teaspoon ground cloves
- Icing and sprinkles (for decorating)
Instructions
- In a stand mixer, beat together unsalted butter, dark brown sugar, granulated sugar, and both salts until light and fluffy.
- Add the egg and molasses; mix until well combined.
- In a separate bowl, whisk together all-purpose flour and spices.
- Gradually add the dry ingredients to the wet mixture; mix on low speed until just combined.
- Divide dough in half; roll out each half on parchment paper to ⅜-inch thick and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cut out shapes from chilled dough using cookie cutters; place on prepared sheets.
- Bake for 10–12 minutes until edges are slightly darkened; cool before decorating.
