Instructions

  1. In a stand mixer, beat together unsalted butter, dark brown sugar, granulated sugar, and both salts until light and fluffy.
  2. Add the egg and molasses; mix until well combined.
  3. In a separate bowl, whisk together all-purpose flour and spices.
  4. Gradually add the dry ingredients to the wet mixture; mix on low speed until just combined.
  5. Divide dough in half; roll out each half on parchment paper to ⅜-inch thick and refrigerate for at least 2 hours.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Cut out shapes from chilled dough using cookie cutters; place on prepared sheets.
  8. Bake for 10–12 minutes until edges are slightly darkened; cool before decorating.
