- Chicken drumsticks
- Olive oil
- Garlic (minced)
- Paprika
- Dried oregano
- Dried thyme
- Potatoes (diced)
- Red bell pepper (optional)
- Salt and pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine chicken drumsticks with olive oil, minced garlic, paprika, oregano, thyme, salt, and pepper. Ensure the drumsticks are evenly coated.
- In another bowl, toss diced potatoes (and red bell pepper if using) with olive oil, paprika, salt, and pepper until well-coated.
- Arrange the chicken on top of the potatoes in a baking dish.
- Roast uncovered for approximately 55 minutes or until the chicken skin is golden brown and the potatoes are crisp-tender. Baste occasionally with pan juices.
- Serve hot and enjoy!
