  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices turkey slices
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the beef filet in a skillet with olive oil over medium-high heat until browned on all sides. Brush with Dijon mustard and allow to cool.
  2. In the same skillet, melt butter and sauté minced garlic and thyme before adding chopped mushrooms until moisture evaporates. Cool completely.
  3. Lay turkey slices on plastic wrap, spread the mushroom mixture on top, place the seared beef, then roll tightly. Chill for 15 minutes.
  4. Roll out puff pastry and wrap it around the chilled beef roll, sealing edges with egg wash. Brush the top with remaining egg yolk.
  5. Bake at 400°F (200°C) for 15–20 minutes until golden brown; let rest for 5 minutes before slicing.
