- 1 (8 oz) center-cut beef filet
- 1 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 cup finely chopped mushrooms (cremini or button)
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp fresh thyme leaves
- 3 slices turkey slices
- 1 sheet puff pastry
- 1 egg yolk (for egg wash)
- Salt and pepper to taste
Instructions
- Sear the beef filet in a skillet with olive oil over medium-high heat until browned on all sides. Brush with Dijon mustard and allow to cool.
- In the same skillet, melt butter and sauté minced garlic and thyme before adding chopped mushrooms until moisture evaporates. Cool completely.
- Lay turkey slices on plastic wrap, spread the mushroom mixture on top, place the seared beef, then roll tightly. Chill for 15 minutes.
- Roll out puff pastry and wrap it around the chilled beef roll, sealing edges with egg wash. Brush the top with remaining egg yolk.
- Bake at 400°F (200°C) for 15–20 minutes until golden brown; let rest for 5 minutes before slicing.
