Ingredients
- 8 chicken pieces (or as much fits in your dish)
- 4 potatoes
- Salt
- Pepper
- Oregano
- Paprika
- 100 ml lemon juice
- 100 ml olive oil
- 5 garlic cloves
- 1 large onion
- 1 tbsp fresh rosemary
- 1.5 tbsp honey
- 1.5 tbsp mustard
Instructions
- Preheat your oven to 175°C (fan forced).
- Place chicken pieces skin-side up in a lined baking dish.
- Cut potatoes into desired thickness and arrange around the chicken.
- Generously season both chicken and potatoes with salt, pepper, oregano, and paprika.
- In a blender, combine lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard; blend until smooth.
- Pour half of the marinade over chicken bottom side and potatoes.
- Flip chicken skin-side up and pour remaining marinade on top.
- Cover the dish tightly with parchment paper and aluminum foil.
- Bake for 90 minutes; then uncover and bake for an additional 30 minutes until golden brown.
- Let rest for 10 minutes before serving.
