Ingredients

  • 8 chicken pieces (or as much fits in your dish)
  • 4 potatoes
  • Salt
  • Pepper
  • Oregano
  • Paprika
  • 100 ml lemon juice
  • 100 ml olive oil
  • 5 garlic cloves
  • 1 large onion
  • 1 tbsp fresh rosemary
  • 1.5 tbsp honey
  • 1.5 tbsp mustard

Instructions

  1. Preheat your oven to 175°C (fan forced).
  2. Place chicken pieces skin-side up in a lined baking dish.
  3. Cut potatoes into desired thickness and arrange around the chicken.
  4. Generously season both chicken and potatoes with salt, pepper, oregano, and paprika.
  5. In a blender, combine lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard; blend until smooth.
  6. Pour half of the marinade over chicken bottom side and potatoes.
  7. Flip chicken skin-side up and pour remaining marinade on top.
  8. Cover the dish tightly with parchment paper and aluminum foil.
  9. Bake for 90 minutes; then uncover and bake for an additional 30 minutes until golden brown.
  10. Let rest for 10 minutes before serving.
