Ingredients
- 8 bone-in chicken thighs
- ⅓ cup extra-virgin olive oil
- ¼ cup lemon juice
- 4 garlic cloves (minced)
- 1 tablespoon dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons Dijon mustard
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- In a mixing bowl, combine extra-virgin olive oil, lemon juice, minced garlic, dried oregano, dried thyme, Dijon mustard, kosher salt, and black pepper.
- Place chicken thighs in a large bowl and pour the marinade over them. Cover and refrigerate for 1 to 8 hours.
- Preheat the oven to 350°F (180°C). Arrange marinated chicken thighs in a baking dish and pour remaining marinade on top.
- Bake for about 40 to 45 minutes or until the internal temperature reaches at least 175°F (80°C). For crispy skin, broil for an additional 2 to 3 minutes if desired.
