Ingredients
- 16 oz boneless skinless chicken breast
- 6 cups baby spinach
- 3 cups sliced strawberries
- 2 oz soft goat cheese
- 3 tbsp golden balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1 tbsp chopped shallots
- 1 teaspoon honey
- 1 teaspoon water
- 1/8 teaspoon kosher salt
- fresh black pepper (to taste)
Instructions
- In a small bowl, whisk together golden balsamic vinegar, olive oil, shallots, honey, water, kosher salt, and pepper to make the dressing.
- Season the chicken breast with seasoned salt and crushed garlic.
- Preheat the grill and cook the chicken for 10-11 minutes on each side until fully cooked. Let it rest before slicing.
- In a large bowl, toss spinach with half of the dressing. Plate servings and top with sliced strawberries, goat cheese crumbles, and grilled chicken.
