  • 8 boneless, skinless chicken breasts
  • 2/3 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 1 tablespoon dried parsley
  • 1 tablespoon dried shallots (or onion)
  • 1 tablespoon Spike seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon coarse ground black pepper

Instructions

  1. Prepare the marinade by combining balsamic vinegar, Dijon mustard, olive oil, and spices in a bowl.
  2. Trim chicken breasts and make small slits in them. Place in a Ziploc bag and pour the marinade over the chicken. Seal and refrigerate for at least 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and grill for about 6 minutes on each side until fully cooked (internal temperature of 165°F).
  5. Let rest for a few minutes before serving.
