Ingredients
- 8 boneless, skinless chicken breasts
- 2/3 cup balsamic vinegar
- 1/4 cup Dijon mustard
- 1/4 cup olive oil
- 1 tablespoon dried parsley
- 1 tablespoon dried shallots (or onion)
- 1 tablespoon Spike seasoning
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon coarse ground black pepper
Instructions
- Prepare the marinade by combining balsamic vinegar, Dijon mustard, olive oil, and spices in a bowl.
- Trim chicken breasts and make small slits in them. Place in a Ziploc bag and pour the marinade over the chicken. Seal and refrigerate for at least 4 hours.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and grill for about 6 minutes on each side until fully cooked (internal temperature of 165°F).
- Let rest for a few minutes before serving.
