Ingredients
- 1.5 lb salmon fillet (skin on)
- Zest and juice of 1 large orange
- 1/2 T olive oil
- 1 T brown sugar
- 1 tsp chipotle chili powder
- 1/2 tsp cumin
- Kosher salt and freshly ground black pepper
Instructions
- Soak a cedar plank in beer and water for at least 4 hours, preferably overnight.
- In a bowl, whisk together orange zest, juice, olive oil, brown sugar, chipotle powder, and cumin.
- Place salmon skin-side down on the soaked plank. Rub the marinade over the top and sides. Season with salt and pepper.
- Preheat grill to medium-high heat (415°F). Grill salmon on the plank for 25 to 30 minutes until it flakes easily with a fork.
