- 4 Boneless Skinless Chicken Breasts
- 1 cup BBQ Sauce
- 1 (15 ounce) Can Pineapple Slices (including juice)
- 2 teaspoons Soy Sauce
- 1 teaspoon Garlic
- 1 Red Bell Pepper (cut into cubes)
- 2 medium Zucchini (sliced)
- Green Onions (for garnish)
Instructions
- Preheat grill to medium heat and cut out four large sheets of heavy-duty foil.
- Place one chicken breast on each foil piece and evenly distribute the vegetables and pineapple slices.
- In a bowl, whisk together BBQ sauce, pineapple juice, soy sauce, and garlic. Set aside about 1/4 cup for later.
- Spoon approximately 2 tablespoons of the sauce over each chicken breast before sealing the foil packets tightly.
- Grill packets for 13-15 minutes, flipping at the halfway mark to ensure even cooking.
- Carefully open packets when done, baste with reserved sauce if desired, garnish with sliced green onions, and serve.
