Ingredients
- 1½ pounds boneless skinless chicken breasts
- ¼ cup oil
- 1 cup barbecue sauce
- 1 (15-ounce) can pineapple slices
- Pineapple juice from can
- 2 teaspoons soy sauce
- 1 teaspoon minced garlic
- Chopped fresh cilantro for garnish
Instructions
- Marinate the chicken by combining it with oil and half of the marinade mixture (barbecue sauce, pineapple juice, soy sauce, garlic) in a resealable bag. Chill for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for 6-8 minutes on each side until cooked through (165°F internal temperature).
- Grill pineapple slices for 2-3 minutes until heated and slightly charred.
- Serve the grilled chicken on top of pineapple slices, brush with reserved sauce, and garnish with cilantro.
