  • 4 (6 oz.) mahi mahi fillets

  • Juice of 1 small lime (divided)
  • 1 tablespoon minced jalapeno pepper

  • 1 tablespoon minced cilantro
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the grill to medium heat.
  2. Cut the avocados and peach in half; remove pits. Spray with olive oil and sprinkle lime juice.
  3. Grill avocado and peach for 3-4 minutes until grill marks appear; chop into small pieces.
  4. In a bowl, combine chopped avocado, peach, minced jalapeno, cilantro, salt, and remaining lime juice.
  5. Mix spices with olive oil; brush onto mahi mahi fillets.
  6. Grill seasoned fillets for about 4 minutes per side until opaque and flaky.
