Ingredients
- 1 ½ California avocados
- 1 large peach (slightly underripe)
- 4 (6 oz.) mahi mahi fillets
- Olive oil spray
- Juice of 1 small lime (divided)
- 1 tablespoon minced jalapeno pepper
- 1/4 teaspoon kosher salt
- 1 tablespoon minced cilantro
- 2 teaspoons paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 3/4 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat the grill to medium heat.
- Cut the avocados and peach in half; remove pits. Spray with olive oil and sprinkle lime juice.
- Grill avocado and peach for 3-4 minutes until grill marks appear; chop into small pieces.
- In a bowl, combine chopped avocado, peach, minced jalapeno, cilantro, salt, and remaining lime juice.
- Mix spices with olive oil; brush onto mahi mahi fillets.
- Grill seasoned fillets for about 4 minutes per side until opaque and flaky.
- Serve topped with salsa and garnished with parsley.
