  • 4 boneless skinless chicken breasts (6 oz each)
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon turmeric
  • 1/3 cup chopped fresh cilantro
  • Salt and freshly ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Use a meat mallet to pound the thicker parts of the chicken breasts to an even thickness.
  2. In a mixing bowl, whisk together olive oil, lemon juice, garlic, ginger, spices, cilantro, salt, and pepper.
  3. Place chicken in a resealable bag and pour marinade over it. Seal the bag while removing excess air and ensure the marinade coats all pieces evenly.
  4. Refrigerate for 2 to 8 hours to marinate.
  5. Preheat the grill to medium-high heat (around 425°F).
  6. Grill chicken for about 4 minutes on each side until the internal temperature reaches 165°F.
  7. Let rest for 5 minutes before serving.
