Ingredients
- 4 boneless skinless chicken breasts (6 oz each)
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon turmeric
- 1/3 cup chopped fresh cilantro
- Salt and freshly ground black pepper
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Use a meat mallet to pound the thicker parts of the chicken breasts to an even thickness.
- In a mixing bowl, whisk together olive oil, lemon juice, garlic, ginger, spices, cilantro, salt, and pepper.
- Place chicken in a resealable bag and pour marinade over it. Seal the bag while removing excess air and ensure the marinade coats all pieces evenly.
- Refrigerate for 2 to 8 hours to marinate.
- Preheat the grill to medium-high heat (around 425°F).
- Grill chicken for about 4 minutes on each side until the internal temperature reaches 165°F.
- Let rest for 5 minutes before serving.
