- 4 bone-in beef chops
- 1 1/2 teaspoons olive oil
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/4 cup frozen pineapple concentrate (thawed)
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- Fresh parsley for garnish
Instructions
- Preheat grill to medium heat and lightly oil the grates.
- In a small skillet over medium heat, heat olive oil and stir in chili powder and cumin until fragrant. Add thawed pineapple concentrate and simmer until reduced to about 2 tablespoons.
- Season beef chops with salt and pepper, then generously apply the pineapple chili glaze.
- Grill the chops for about 3 minutes on one side, flip them over, and grill for an additional 2 minutes until cooked through.
- Let rest briefly before serving; garnish with fresh parsley if desired.
