  • Total Time: 50 minutes
  • Yield: Serves about 4 people 1x

Ingredients

Scale
  • 1 pound russet potatoes (cut into 1-inch pieces)
  • 1 medium onion (cut into small chunks)
  • 6 garlic cloves (peeled & cut into thirds)
  • 1 tablespoon + 1 teaspoon olive oil
  • 1 ½ teaspoon crushed dried rosemary
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Preheat the grill to medium heat.
  2. In a large mixing bowl, combine potatoes, onion, garlic, and olive oil; toss until well coated.
  3. Add rosemary, smoked paprika, salt, and pepper; mix again until evenly distributed.
  4. Create a foil packet by overlapping two pieces of aluminum foil in an X shape and placing the potato mixture in the center. Fold sides up securely.
  5. Wrap in an additional piece of foil for leakage protection.
  6. Grill the packet on medium heat for about 20 minutes; flip and continue grilling for another 15 to 20 minutes until potatoes are tender and browned.
  7. Carefully open the package after resting for 10-15 minutes before serving.
