Ingredients
- 1 pound russet potatoes (cut into 1-inch pieces)
- 1 medium onion (cut into small chunks)
- 6 garlic cloves (peeled & cut into thirds)
- 1 tablespoon + 1 teaspoon olive oil
- 1 ½ teaspoon crushed dried rosemary
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Preheat the grill to medium heat.
- In a large mixing bowl, combine potatoes, onion, garlic, and olive oil; toss until well coated.
- Add rosemary, smoked paprika, salt, and pepper; mix again until evenly distributed.
- Create a foil packet by overlapping two pieces of aluminum foil in an X shape and placing the potato mixture in the center. Fold sides up securely.
- Wrap in an additional piece of foil for leakage protection.
- Grill the packet on medium heat for about 20 minutes; flip and continue grilling for another 15 to 20 minutes until potatoes are tender and browned.
- Carefully open the package after resting for 10-15 minutes before serving.
