Ingredients
- 4 boneless skinless chicken thighs
- 2 romaine hearts
- 2 ears of corn
- 1/2 cup jarred mild salsa
- 4 teaspoons extra virgin olive oil
- 1 lime
- Avocado, red onion, grape tomatoes (for garnish)
Instructions
- Prepare the dressing by mixing salsa, olive oil, and lime juice in a bowl; set aside.
- Season chicken thighs with salt, oregano, and cumin.
- Preheat grill to medium heat. Cut romaine hearts in half; spray cut sides with olive oil. Spray corn with olive oil as well.
- Grill chicken for about 5 minutes on each side until cooked through; grill corn until tender.
- Grill halved romaine cut side down for 1-2 minutes until charred.
- Slice grilled chicken and corn off the cob; serve over romaine with avocado, onions, tomatoes, and drizzle with salsa dressing.
