  • 2 romaine hearts
  • 2 ears of corn
  • 1/2 cup jarred mild salsa
  • 4 teaspoons extra virgin olive oil
  • 1 lime
  • Avocado, red onion, grape tomatoes (for garnish)

Instructions

  1. Prepare the dressing by mixing salsa, olive oil, and lime juice in a bowl; set aside.
  2. Season chicken thighs with salt, oregano, and cumin.
  3. Preheat grill to medium heat. Cut romaine hearts in half; spray cut sides with olive oil. Spray corn with olive oil as well.
  4. Grill chicken for about 5 minutes on each side until cooked through; grill corn until tender.
  5. Grill halved romaine cut side down for 1-2 minutes until charred.
  6. Slice grilled chicken and corn off the cob; serve over romaine with avocado, onions, tomatoes, and drizzle with salsa dressing.
