Instructions
- Preheat the grill to medium-high heat (425°F). Brush the grates with oil.
- Slice zucchini into ½-inch thick half-moons. Drizzle with olive oil, season with salt and pepper, and grill for 2-3 minutes per side until tender with grill marks.
- In a grill pan, combine halved cherry tomatoes and corn; drizzle with olive oil, season lightly, and grill for about 2-3 minutes until charred.
- In a salad bowl, whisk together remaining olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add grilled vegetables and arugula to the dressing; toss gently. Top with crumbled goat cheese before serving.
