Ingredients
- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
- In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant (about 2 minutes).
- Add the ground turkey to the skillet, cooking until browned and crumbly (approximately 5-6 minutes).
- Stir in the diced tomatoes, Italian herbs, salt, and black pepper. Simmer for about 3-4 minutes.
- In the prepared baking dish, layer half of the sliced zucchini followed by half of the turkey mixture and half of the mozzarella cheese. Repeat these layers once more.
- Bake uncovered for 30-35 minutes until bubbly with golden cheese on top. Let cool for about 5 minutes before serving.
