Ingredients

For the Salad:
4 cups celery, thinly sliced
2 apples (such as Fuji or Honeycrisp), thinly sliced
1/3 cup dried cranberries
1/3 cup walnuts or pecans, roughly chopped
1/4 cup red onion, thinly sliced
2 tablespoons fresh parsley, chopped

  1. For the Dressing:
    3 tablespoons olive oil
    2 tablespoons apple cider vinegar
    1 tablespoon honey
    1 teaspoon Dijon mustard
    Salt and black pepper, to taste

Instructions

  1. Wash and thinly slice the celery and apples. If desired, toss the apple slices with a little lemon juice to prevent browning.

  2. In a large bowl, combine celery, apples, dried cranberries, chopped nuts, red onion, and parsley.

  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.

  4. Pour the dressing over the salad and toss gently to coat all ingredients evenly.

  5. Let the salad sit for 10–15 minutes before serving to allow the flavors to meld.

  6. Toss again lightly and adjust seasoning if needed before serving.
