Ingredients
- 2½ lbs Yukon gold potatoes
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1¼ cups heavy cream
- 2 garlic cloves
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh thyme leaves
- 1 cup shredded Gruyère cheese
- ½ cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish.
- In a small saucepan, warm cream with minced garlic, salt, pepper, and thyme until fragrant.
- Toss potato slices in melted butter and olive oil. Arrange them upright in the baking dish.
- Layer Gruyère and Parmesan between potato layers and pour the cream mixture over the top.
- Cover with foil and bake for 45 minutes; uncover and bake for an additional 25–30 minutes until golden.
- Let rest for 5–10 minutes before serving.
