  • 1 ½ pounds boneless skinless chicken breasts (cut into 1-inch cubes)
  • 1 red bell pepper (diced)
  • 1 orange bell pepper (diced)
  • 1 cup pineapple chunks
  • 1 green bell pepper (diced)
  • 1 red onion (diced)
  • ⅓ cup ketchup
  • ⅓ cup soy sauce
  • ⅓ cup brown sugar
  • ¼ cup pineapple juice
  • 2 teaspoons sesame oil
  • 1 teaspoon minced ginger
  • 3 cloves garlic (minced)
  • 1 teaspoon sriracha

Instructions

  1. In a bowl or freezer bag, combine marinade ingredients. Reserve ½ cup for vegetables.
  2. Add chicken to remaining marinade and coat well. Marinate for at least 30 minutes or up to 4 hours.
  3. Preheat grill to medium-high heat (400°F).
  4. Toss diced peppers, pineapple, and onion in reserved marinade.
  5. Thread marinated chicken and vegetables onto skewers.
  6. Grill kabobs for about 12 to 16 minutes, turning frequently and basting with leftover marinade.
