- 1 ½ pounds boneless skinless chicken breasts (cut into 1-inch cubes)
- 1 red bell pepper (diced)
- 1 orange bell pepper (diced)
- 1 cup pineapple chunks
- 1 green bell pepper (diced)
- 1 red onion (diced)
- ⅓ cup ketchup
- ⅓ cup soy sauce
- ⅓ cup brown sugar
- ¼ cup pineapple juice
- 2 teaspoons sesame oil
- 1 teaspoon minced ginger
- 3 cloves garlic (minced)
- 1 teaspoon sriracha
Instructions
- In a bowl or freezer bag, combine marinade ingredients. Reserve ½ cup for vegetables.
- Add chicken to remaining marinade and coat well. Marinate for at least 30 minutes or up to 4 hours.
- Preheat grill to medium-high heat (400°F).
- Toss diced peppers, pineapple, and onion in reserved marinade.
- Thread marinated chicken and vegetables onto skewers.
- Grill kabobs for about 12 to 16 minutes, turning frequently and basting with leftover marinade.
