  • 3 large eggs
  • 1 cup whole wheat bread crumbs

  • 1.5 cups shredded mozzarella cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Butterfly and pound the chicken breasts to about ¼ inch thick for even cooking.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Set up three shallow bowls: one with flour, another with whisked eggs, and the last with breadcrumbs mixed with Parmesan and seasonings.
  4. Bread each chicken cutlet by coating it in flour, dipping it in egg, and then coating it with the breadcrumb mixture.
  5. Place the breaded cutlets on the baking sheet and bake for 15 minutes. Flip and bake for another 15 minutes until golden.
