Ingredients
- 8 ounces rotini noodles
- 3/4 cup chopped English cucumber
- 3/4 cup shredded carrot
- 1 yellow bell pepper (chopped)
- 1/2 cup diced red onion
- 5 ounces sliced olives
- 14 ounces cherry tomatoes (halved)
- 3–4 ounces turkey pepperoni (quartered)
- 6 ounces fresh mozzarella (cubed)
- 2 ounces fresh basil (thinly sliced)
- 1/3 cup light Caesar dressing
- 1/3 cup light Greek dressing
- Salt and pepper to taste
Instructions
- Cook the rotini noodles in a large pot of boiling water according to package instructions until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooled pasta with chopped cucumber, shredded carrot, yellow bell pepper, diced red onion, sliced olives, halved cherry tomatoes, quartered turkey pepperoni, cubed mozzarella, and sliced basil.
- Add both dressings along with salt and pepper. Toss everything until well combined.
- Transfer to a serving dish or keep in the mixing bowl. Chill before serving for enhanced flavor.
