- 1 ¼ teaspoon cream of tartar
- ¼ teaspoon clear vanilla extract

- 1 ⅓ cups granulated sugar
Instructions
- Preheat your oven to 375°F (190°C).
- Sift together cake flour and ½ cup sugar four times to aerate.
- In a large metal bowl, beat egg whites, salt, cream of tartar, vanilla, and almond extract until soft peaks form.
- Gradually add the remaining 1 ⅓ cups of sugar in four additions, beating well after each addition.
- Gently fold in the flour mixture in four parts without overmixing.
- Pour batter into an ungreased tube pan and smooth the top with a spatula.
- Bake for about 30-35 minutes or until golden brown, then cool upside down in the pan.
