Ingredients
- 350 grams strawberries (15–18 strawberries)
- 100 grams granulated sugar (1/2 cup)
- 118 milliliters water (1/2 cup)
- 1/2 tablespoon lemon juice
Instructions
- Hull the strawberries by removing the core and leaves.
- In a blender, combine the hulled strawberries and water. Blend until smooth.
- Pour the puree through a fine mesh sieve set over a saucepan, using a spatula to strain it into the pot.
- Over medium heat, add sugar and lemon juice to the puree. Stir until dissolved and bring to a gentle boil.
- Cook for about 10 minutes until thickened, ensuring it coats the back of a spoon.
- Allow to cool before transferring to an airtight container. Store in the fridge for up to two weeks.
