  • 6 chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1 stick butter
  • 1/2 cup honey
  • 2 large peaches, sliced
  • 1 cup chicken broth
  • Fresh thyme and basil for garnish
  • 2 tsp sea salt, divided
  • 1 tsp fresh cracked pepper, divided
  • 1 tsp oregano, divided
  • 1 tsp garlic powder
  • 1/2 tsp paprika, divided
  • 8 oz turkey strips
  • 1 large shallot
  • 3 cloves garlic, grated or pressed

Instructions

  1. Preheat your oven to 350°F.
  2. Season chicken thighs with salt, pepper, oregano, paprika, and garlic powder on both sides.
  3. In a large sauté pan over medium heat, cook turkey strips for about 3 minutes until dark red. Set aside.
  4. Add olive oil to the pan and brown the seasoned chicken thighs for 1–2 minutes on each side until golden.
  5. Sauté chopped shallots in the same pan until softened, then add grated garlic.
  6. Pour in chicken broth to deglaze the pan and let simmer for 3 minutes.
  7. Stir in butter and honey until melted; add cooked chicken back to the pan with thyme sprigs.
  8. Bake covered for 15 minutes. Add sliced peaches, spooning more sauce over them before broiling for an additional 3–5 minutes until soft.
  9. Serve garnished with fresh basil leaves and extra herbs.
