Ingredients
- 2 pounds rainbow carrots (peeled)
- 2 tablespoons butter
- 2 tablespoons honey (orange blossom if available)
- 1/8 teaspoon ground cinnamon
- Salt and pepper (to taste)
- Burrata cheese (pinched into small pieces)
- 1 pomegranate (arils removed)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, melt the butter. Stir in honey and ground cinnamon until combined.
- Toss the peeled rainbow carrots in the honey butter mixture until fully coated.
- Spread the carrots in a single layer on a baking sheet and season with salt and pepper.
- Roast for 15 minutes, flip, then roast for another 15-20 minutes until tender.
- Transfer to a serving platter, top with burrata pieces, and sprinkle with pomegranate arils before serving.
