- 3 large overripe bananas (about 1.5 cups mashed)
- 1 cup all-purpose flour
- 1/2 cup honey
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add melted butter, honey, eggs, and vanilla extract to the mashed bananas; mix well.
- In another bowl, whisk together flour, baking soda, and salt. Gradually fold this mixture into the wet ingredients until just combined; some lumps are okay.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
