- 2 Honeycrisp apples, thinly sliced
- 1 cup mixed greens (arugula, spinach, or baby kale)
- 1/2 small red onion, thinly sliced
- 1/2 cucumber, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted pecans or walnuts
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Wash and slice the apples, cucumber, and red onion. Toast the nuts in a skillet over medium heat until fragrant.
- In a large bowl, combine mixed greens, sliced apples, cucumber, red onion, and feta cheese.
- In a separate bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Adjust seasoning as desired.
- Drizzle dressing over the salad mixture and gently toss to combine. Top with toasted nuts before serving.
