- 2 Honeycrisp apples

Instructions
- Wash and thinly slice the Honeycrisp apples, cucumber, and red onion.
- Toast the pecans or walnuts in a dry skillet over medium heat until fragrant.
- In a large mixing bowl, combine mixed greens, sliced apples, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, balsamic vinegar (or apple cider vinegar), honey, salt, and pepper.
- Drizzle the dressing over the salad mixture and gently toss to combine.
- Top with toasted nuts before serving.
