Ingredients

  • 2 bunches celery, chopped
  • 2 large shallots, diced
  • 1 bunch fresh parsley, diced
  • 1 bunch fresh cilantro, diced
  • Handful toasted sunflower seeds
  • Handful chopped pistachios
  • Handful toasted sliced almonds
  • ½ cup dried blueberries or cranberries
  • 2 large lemons, juiced
  • ¼ cup plus 2 tablespoons avocado oil or olive oil
  • 1½ teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • ¼ cup honey

Instructions

  1. Wash and chop all fresh ingredients: celery, shallots, parsley, and cilantro.
  2. In a separate bowl, whisk together the lemon juice, avocado oil (or olive oil), salt, pepper, garlic powder, and honey until well combined.
  3. In a mixing bowl, combine the chopped celery, shallots, parsley, cilantro, sunflower seeds, pistachios, almonds, and dried blueberries (or cranberries).
  4. Pour the dressing over the salad mixture and toss gently until well coated.
  5. Serve immediately or chill in the refrigerator to meld flavors.
