Ingredients
- 85 g salted butter
- 220 g white sugar
- 2 eggs
- 220 g rice flour
- ½ tsp baking powder
- 220 ml milk
- 200 ml coconut milk
- 1 tsp vanilla extract
- Unsweetened coconut flakes (optional)
Instructions
- Preheat your oven to 350°F and line an 8-inch x 8-inch brownie pan with parchment paper.
- In a bowl, mix rice flour and baking powder. Melt butter in the microwave for about 20 seconds.
- In a large bowl, beat the eggs until fluffy, then add sugar, melted butter, and vanilla extract; mix well.
- Stir in both types of milk until fully combined.
- Gradually add the dry mixture to the wet ingredients, mixing until smooth.
- Pour batter into the prepared pan and sprinkle coconut flakes on top if desired.
- Bake for about 30 minutes or until golden brown on edges and top.
- Allow cooling before cutting into squares.
