- 8 oz penne pasta
- 1 lb ground chicken or turkey sausage
- 3 cloves fresh garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth
- 2 tbsp olive oil
Instructions
- Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
- In a large skillet over medium heat, add olive oil. Crumble in the sausage and cook until browned (5–7 minutes).
- Stir in minced garlic and sun-dried tomatoes; sauté for an additional minute until fragrant.
- Pour in chicken broth and heavy cream, stirring well. Simmer for about 5 minutes.
- Add fresh spinach and Parmesan cheese, mixing until melted.
- Combine cooked pasta with the sauce, adding reserved pasta water as needed to achieve desired consistency.
